There are many helicopters and small airplane companies on Kauai that you can use to explore the island.  We went to Wings Over Kauai on Wednesday and boarded a small airplane for an hour tour.  Chris rode in the co-pilot seat which looked like a great place to be for the flight.  We saw parts of the island that are not accessible by car and it was definitely a great adventure.

For dinner we went to the Grand Hyatt which was very fun since we sat by the koi ponds.  I'm hoping to win the lottery one day so I can spend a week in an ocean view room there :-)
